Description: Capicollo azze anca is obtained from the hip of pigs raised in a semi-wild state. It has a characteristic pink color, intense aroma and a delicate flavor that goes well with the aroma of fennel, black pepper and dried red chili pepper with which it is enriched.
The delicate and important phase of maturing lasts for at least 180 days.
